DESCRIPTION: "Multi Long" (TU 10.89.19-005-17683026-2017) is a complex quality improver for flour confectionery products; it is used to preserve the freshness and softness of ready baked products. It contains in its composition a moisture-retaining ingredient, the use of which allows to reduce the water activity index (Aw), thereby slowing down the process of drying of finished products. METHOD OF APPLICATION: "Multi Long" is introduced into the dough during kneading or whipping at the same time as the liquid formulation components. Recommended dosage*: 1.0 - 2.0% by weight of the formulation components *Dosage depends on the type and formulation of the product, production method. BENEFITS: effectively binds and retains moisture in the product; prolongs the freshness of finished products; does not change the flavor of finished products. NUANCES OF USING There are many variations in the composition and production method of flour confectionery. The same group of products, which are produced according to the same technology, but at different enterprises, will differ. Therefore, the choice of freshness extender, its dosage should be approached individually. It is important to remember about: ⦁ The acidity of the medium: the more acidic the product, the less preservative is needed; ⦁ In products with a higher prescription water content, when it is stipulated by the technological process, the preservative should be introduced in the maximum dosage; ⦁ More than 65% of sugar contributes to antimicrobial action, so it is sufficient to introduce a minimum dosage of preservative in the formulation of such foods. The stage at which a freshness extender is added to a product is determined by its production technology. At the same time, freshness extenders can be used as separate monocomponents as preservatives, or complex additives that have already been selected and tested at companies engaged in the development of food ingredients. Important! Western markets are now open to those manufacturers who do not use preservatives with propylene glycol. This expands opportunities also from the marketing point of view: such products can be packaged with the label "Does not contain propylene glycol": to emphasize their benefits for humans in the trend of a healthy lifestyle. Finally, by eliminating propylene glycol from the formulation, the cost of production becomes lower.
